Description
This is a combination of recipes for our favorite taco salad.
|
Directions
Tor prepare dressing, combine all ingredients , stirring well. Add salt and pepper to taste.
To prepare salad, combine lettuce and slaw mix and remaining ingredients in a large chilled salad bowl. Drizzle dressing over the salad and toss gently to coat. Serve immediately.

Ingredients
Dressing:
1/2 cup chopped fresh cilantro
1 cup sour cream (may use fat-free)
1-2 T. minced chipotle chili canned in adobo sauce
2 tsp. ground cumin
2 tsp. ground chili powder (may use ancho chili powder, if desired)
Juice from 1 fresh-squeezed lime
Salt and pepper to taste
Salad:
2 cups chopped romaine lettuce
1 pkg. "Brocco-slaw" (Coleslaw made from broccoli and carrots)
2-3 cups chopped chicken (breasts or thighs)
1 cup cherry tomatoes, halved
1 diced, peeled avocado
1/3 cup sliced green onions
1 (15 oz.) can black beans, rinsed and drained
2 ears corn, cooked and sliced off the cob
Corn chips or tortilla chips as desired or on the side
