Chipotle Chicken Taco Salad submitted by Mom Johnson
This is a combination of recipes for our favorite taco salad.

Tor prepare dressing, combine all ingredients , stirring well. Add salt and pepper to taste.

To prepare salad, combine lettuce and slaw mix and remaining ingredients in a large chilled salad bowl. Drizzle dressing over the salad and toss gently to coat. Serve immediately.

v Dressing:
v 1/2 cup chopped fresh cilantro
v 1 cup sour cream (may use fat-free)
v 1-2 T. minced chipotle chili canned in adobo sauce
v 2 tsp. ground cumin
v 2 tsp. ground chili powder (may use ancho chili powder, if desired)
v Juice from 1 fresh-squeezed lime
v Salt and pepper to taste

v Salad:
v 2 cups chopped romaine lettuce
v 1 pkg. "Brocco-slaw" (Coleslaw made from broccoli and carrots)
v 2-3 cups chopped chicken (breasts or thighs)
v 1 cup cherry tomatoes, halved
v 1 diced, peeled avocado
v 1/3 cup sliced green onions
v 1 (15 oz.) can black beans, rinsed and drained
v 2 ears corn, cooked and sliced off the cob
v Corn chips or tortilla chips as desired or on the side
