Description
This is one of the best salmon recipes I've ever tried. Using the newest method of cooking on wooden planks keeps the fish exceptionally moist and adds unique flavor that can't be beat!

Directions
Thoroughly mix all rub ingredients in a shallow bowl. Lay fish, skin side down, on the prepared plank. Lightly score the fish if thicker than 1 inch. Gently but firmly rub ingredients into fish fillet. This rub can be a little sticky and needs to be slowly worked into the fish. If using a skinned fillet, rub mixture onto both sides. Cook immediately or for a fuller flavor, let fillet marinate, covered for up to 12 hours in the refrigerator. Grill or bake at 350 degrees for 15-25 minutes or until fish is opaque and flakes in large chunks. Garnish with fresh sliced lemons, if desired.

Ingredients
v 1 salmon fillet, tuna or halibut
v 1 alder plank, soaked in water

v Smoky Rub

v 2 T. brown sugar
v 2 tsp. freshly ground black pepper
v 1 tsp. onion powder
v 1 tsp. garlic powder
v 1 tsp. liquid smoke
v 1 tsp. salt
