Description
A weeknight dinner served with buttery mashed potatoes is pure comfort food. I use Bison meat from Costco instead of ground beef....

Directions
Preheat oven to 350.Stir together cracker crumbs, evaporated milk, Worcestershire sauce, salt, pepper, eggs garlic and onion in a large bowl. Add the beef or Bison to the bowl and mix well with hands to combine. Turn mixture out onto pan and shape into a 9x4 inch freeform loaf.
Bake at 350 degrees for 35 minutes. Meanwhile whisk together the ketchup and pepper jelly in a medium bowl.
Remove meatloaf from the oven (leave oven on). You can pat away some of the drippings and cooked proteins if desired. Spread ketchup mixture over meatloaf and return to oven. Bake until thermometer inserted in the center of loaf registers about 165 degrees, about 30 minutes. Remove from oven and let stand for about 5 minutes. Cut into 12 slices. Serves 6-12.

1 1/2 cups crushed Ritz crackers
2/3 cup evaporated mile
1 1/2 T. Worcestershire sauce
2 tsp. salt
1/2 tsp. pepper
2 large eggs
2 garlic cloves, minced
1 medium sweet onion, chopped
2 pounds lean ground beef (or ground Bison)
2/3 cup ketchup
3 T. pepper jelly
