|
Directions
Have the butcher prepare roast for stuffing. Stuff with a mixture of the dried fruit and fresh apple slices. Rub outside of the meat with salt and pepper. Roast in a 300 degree oven, uncovered for about 1 1/2 hours or till lightly browned. Remove from oven, score meat in a cross-hatch design and stud with whole cloves. Sprinkle with brown sugar and cinnamon. Add 2 cups water to the bottom of the roasting pan. Cover and return to the oven for 1 hour. Serve meat in 1-inch slices topped with the gravy left in pan.
