Description
The great combination of flavors in this casserole are so delicious that even those who don't like squash will ask for seconds! (I think this is a great casserole for kids who won't eat their veggies!)

Directions
Heat oven to 350 degrees. In a small bowl, combine eggs, squash, and salsa. Spread over the bottom of a shallow 2-quart casserole. Layer cooked sausage, sliced tomato, green chilies, corn and cheese over the squash mixture. Bake at 350 degrees for 30-40 minutes or until hot and cheese is melted. Spoon chopped tomato over the top of the casserole and arrange tortilla chips around the edge of the casserole. let stand for 10 minutes before serving. makes about 6 servings.

2 cups mashed, cooked squash (like butternut or acorn)
1/2 cup salsa
2 eggs, beaten
1 pound spicy turkey sausage, cooked and drained
1 medium tomato, sliced
1 (4 oz.) can diced green chilies, drained
1 can (11 oz.) Mexicorn, drained
1 1/2 cups shredded Monterey jack cheese
1 medium tomato, chopped
Tortilla chips
