Description
The secret to this meatloaf is the beer. A complex flavor is obtained by cooking down the beer with the onions. Very Yummy!
|
Directions
1. Preheat oven to 375F. Coat an 8x4 inch loaf pan with cooking spray.
2. Heat oil in a large skillet over med/high heat. Cook onion until translucent and just starting to brown. Pour beer in and increase heat to high, bring to a boil. Cook until the liquid is syrupy and reduces to about 3/4c, approx. 8 to 10 min. Transfer to a large bowl and stir in thyme, mustard, salt, and pepper. Cool for 10 min.
3. Add remaining ingredients to the onion mixture. Mix thoroughly with clean hands and put in prepared pan.
4. Bake until thermometer in middle of meat measures 160F, about 1 hour 20 minutes. Let rest 5 min and serve.

Ingredients
2t canola oil
1 med sweet onion, chopped
12 oz bottle of beer (not light)
1t dried thyme leaves
1t dry mustard
3/4t salt
Ground pepper to taste
1-1/4# lean ground beef
1-1/4# lean ground turkey
1 cup fresh whole-wheat breadcrumbs
1/4c fresh parsley, chopped
1 large egg, lightly beaten
1 egg white, lightly beaten
