Description
Use an electric skillet if you have one...then you only have one pan to clean up! This is a kid-pleaser!

Directions
Combine meat, eggs, bread crumbs, 1 1/2 tsp. salt, onion powder, pepper and 1/2 cup water. Mix well and shape into meatballs. Heat oil in skillet, adding meatballs and browning on all sides. Remove from skillet. Add rice, onion and garlic to oil remaining in skillet. Stir until golden. Stir in remaining 1/2 cup water and 3/4 tsp. salt along with remaining ingredients. Return meatballs to skillet, spooning some of the rice mixture over the meatballs. Bring to boiling, reduce heat and simmer, covered until rice is tender (about 5-10 minutes).

Ingredients
1 1/2 pounds lean ground meat
2 eggs, slightly beaten
1/2 cup dry breadcrumbs
1 tsp. onion powder
Salt and pepper
1 cup water, divided
4 T. oil
1 medium onion, chopped
1 clove garlic, minced
1 1/2 cups Minute rice
1 (1 pound) can cut-up tomatoes
1 (8 oz.) can pineapple chunks
1 (10 oz.) pkg. frozen petite peas
1 T. brown sugar
1/4 tsp. ginger
1 T. lemon juice
