Description
Not your usual stuffed pepper! Even those who don't like stuffed peppers will like this recipe! Make the peppers as spicy as you like by varying the type of sausage.

Directions
Preheat oven to 350 degrees. Brown turkey sausage in a nonstick skillet over medium heat till no longer pink, stirring to separate; drain fat. Add corn, pasta, beans, 1 1/4 cups salsa, water, cornmeal, chili powder and cumin. Bring to a boil; remove from heat. Place pepper halves in a 13x9 inch baking pan and fill each with equal amounts of sausage mixture. Cover tightly with foil and bake for 1 hour. If desired, top with additional salsa, cheese, green onions or cilantro, and sour cream. Makes 4 servings

Ingredients
1/2 pound spicy turkey sausage
1 cup frozen white corn
4 oz. uncooked orzo or small shell pasta
1 cup black beans, rinsed and drained
1 3/4 cups mild Picante salsa, divided
1/2 cup water
1/4 cup cornmeal
1 T. chili powder
1/2 tsp. cumin
4 medium green bell peppers, halved and seeded
1/2 cup shredded cheddar cheese
Non-fat sour cream
Choppped fresh cilantro or green onions
