Description
This is really good! You may make the pork pieces on a skewer as an appetizer or as a main dish meat.

Directions
In a large bowl combine the onions, gin and olive oil. Using your hands squish and mash the onions for about a minute to mellow them.

Place all the remaining spices, seasoning and garlic into a mortar and pestle (I used a small coffee grinder) and grind into a paste, fairly smooth but still with some grit to it. Combine the paste with the onion, gin and oil mixture; add the pork cubes and stir with your hands to coat.

Soak your wooden skewers in warm water for at least a couple of minutes but no more than an hour so they don't scorch or flame up on the grill.

Wrap one piece of thinly sliced bacon around each pork cube, taking care to skewer both ends of the bacon. Repeat until all pieces of pork are wrapped. Put 3-4 pieces of pork onto each skewer. Pour remaining marinade over the skewered meat and set aside until it's time to grill.

Lightly salt and pepper each skewer. Grill each to medium-rare which should take about 10 minutes each. Turn skewers regularly so you get a nice crisp on the bacon. Remove from heat and let rest for 3-5 minutes. Serves 5-6 for a main dish meal.

Ingredients
v 2 pork tenderloins, cut into 1-inch cubes
v 1/2 yellow onion, julienned
v 1/4 cup gin
v 1/4 cup good olive oil
v 6 dried juniper berries
v 2 cloves garlic
v 1 tsp. whole coriander seeds
v 1/2 tsp. chili flakes
v Salt and Pepper
v 20 pieces of thinly sliced bacon, cut in half (about 5 inches long)
v Wooden skewers, soaked
