Description
Use lean cuts of beef for this jerky - great for a Father's Day gift! For extra heat, add more chipotle chilies!

Directions
Bring the cola, soy sauce, vinegar, honey and 1 tablespoon salt to a simmer in a saucepan over medium heat. cook, stirring, until reduced to about 1 cup, about 10-12 minutes. Remove from the heat and stir in the chipotles, paprika and onion powder; let cool completely.

Trim the excess fat from the beef and slice on an angle into 1/4 inch thick strips. Combine the strips and the cola mixture in a resealable plastic bag and shake to coat. Press the air out of the bag, seal and let marinate at least 24 hours and up to 3 days.

Drain the meat and discard the marinade. Lay strips in food dehydrator according to manufacturer's instructions. Dry until the jerky is dry but still bendable, about 2-4 hours. Carefully remove and let cool completely. Refrigerate in an airtight container for up to 2 weeks. Makes a little less than 2 pounds of jerky.

Ingredients
v 1 cup cola
v 1/3 cup soy sauce
v 1/3 cup unseasoned rice vinegar
v 1/4 cup honey
v Kosher salt
v 1-2 chipotle chiles in adobo sauce, coarsely chopped
v 1 tsp. smoked paprika
v 1 tsp. onion powder
v 2 pounds boneless beef sirloin or flank steak, 1 inch thick
