Description
A fabulous lemon bar recipe worthy of the best tea parties. From an authentic English lady in Pasadena.

Directions
In a large mixing bowl, cream the butter. Add flour, sugar, and baking soda and beat till lumpy.
Pat 2/3rd's of the mixture into the bottom of a 13x9 inch pan and bake at 375 for 10 minutes. Remove from oven and cool slightly. Lower oven temp to 350 degrees. With a spatula, spread lemon curd over baked layer.
To remaining 1/3 crumb mixture, add the coconut and almonds. Spread on top of lemon curd. Bake at 350 degrees for another 25 minutes or until lightly browned.
Lemon Curd
Beat the rind, juice and egg together in a heat-proof bowl. Cream the butter and sugar and stir into the lemon mixture. Stand the basin over a double boiler stirring and beating occasionally until it thickens to bulky creaminess. (Double the recipe for lemon bars.)

1 cup unsalted butter, softened
2 cups flour
1 cup sugar
1/2 tsp. soda
10-12 oz. jar lemon curd*
2/3 cup coconut
1/2 cup chopped, toasted almonds or other nuts

Grated rind and juice of 2 lemons
1 medium egg
3 T. butter
1/4 cup superfine or regular sugar
