Description
Mild-tasting turkey makes this homemade breakfast sausage, using your favorite herbs and spices.

Directions
In a small bowl, combine cranberries and brandy. Set aside for at least 10 minutes.
Meanwhile, heat a 12-14 inch pan over medium-high heat. Add butter and wait for about 1 minute; add onion and garlic. Cook, stirring often until onion is soft but not brown. Remove from heat.
In a large bowl mix the bread crumbs, salt, dried sage, thyme, nutmeg, red pepper flakes and white pepper. then lightly mix in the turkey, pork, onion mixture, orange zest, parsley and cranberry mixture. Shape turkey mixture into 16 patties, each about 1/2 inch thick.
Preheat pan in which onion was cooked over medium-high heat. Add oil and wait for about 1 more minute. Add patties in a single layer and cook, turning once, until well-browned on both sides (about 4 minutes per side). Lift out patties and place on a warm serving platter. Garnish with sage leaves, if desired. Makes 16.

1/4 cup dried cranberries
2 T. brandy
1 T. butter
1 small onion, finely chopped
1 clove garlic, minced
1/3 cup soft breadcrumbs
1 1/2 tsp. salt
1 tsp. sage
1 tsp. thyme
1/2 tsp. ground nutmeg
1/2 tsp. crushed red pepper flakes
1/4 tsp. white pepper
1 pound ground turkey
1 pound lean ground pork
2 tsp. grated orange zest
1/4 cup chopped parsley
Oil for frying
Fresh sage leaves (optional)
