Description
A high fiber muffin that goes great with leftover turkey soup or try Turkey Meatball Soup along with these hot muffins. A word of warning - they are addictive and have a LOT of fiber in them!

Directions
In a large bowl combine the egg, milk and cooking oil; stir in the bran cereal. Let stand for 5 minutes. Meanwhile, mix brown sugar and the melted butter. Place a teaspoonful of the brown sugar mixture into each of 18 greased 2 1/2 inch muffin cups. Sprinkle some of the cranberries into each. Stir together the flour, granulated sugar, baking powder, and salt; add the bran mixture, stirring just till moistened. Spoon atop the cranberries. Bake in a 400 degree oven for 20-25 minutes. Cool 30 seconds; turn out onto a wire rack. Makes 18 muffins.

1 beaten egg
1 1/4 cups milk
1/3 cup cooking oil
1 1/2 cups whole bran cereal (Bran Buds, All-bran)
1/2 cup packed brown sugar
1/4 cup butter
1 cup fresh or frozen cranberries, chopped
1 1/4 cups all-purpose flour
1/3 cup granulated sugar
1 T. baking powder
1/2 tsp. salt
