Description
Try using different jams in this recipe. Or add 1/2 cup chopped nuts for extra protein.

Directions
Preheat oven to 350 degrees. Coat a 9 inch square baking dish with cooking spray. Stir together flour, cinnamon, baking soda and salt in a large bowl.
Cream sugar and butter in another bowl until light and fluffy. Beat in egg and vanilla and almond extracts until smooth. Add flour mixture to butter mixture; mix until combined. Stir in 1 3/4 cups oats. Spread two-thirds of batter on bottom of prepared baking dish. Spread jam over batter with back of a spoon.
Add remaining 1/4 cup oats to remaining batter. Crumble over the top of the jam. Bake for 30 minutes or until golden. Cool, then cut into bars. Makes 16 bars.

1/2 tsp. baking soda
1/4 tsp. salt
1 cup light brown sugar
1/2 cup unsalted butter
1 large egg
1 tsp. vanilla
1/2 tsp. almond extract
2 cups old-fashioned rolled oats, divided
1 cup raspberry jam
