Description
These are pretty yummy - even my non-oatmeal-liking husband gave them a "thumbs-up"!

Directions
Heat oven to 375 degrees and spray baking sheets with a non-stick spray or use parchment paper. Beat shortening, sugar, and brown sugar in a large bowl until creamy. Beat in the eggs and the vanilla. Combine flour, baking soda, cinnamon and salt in a small bowl. Beat into the shortening mixture until blended. Stir in the oats, cranberries, chocolate and walnuts. Drop by rounded tablespoonfuls about 2 inches apart on prepared baking sheets. Bake for 10-12 minutes or until lightly browned. Cool on sheets for about 2 minutes then on cooling racks till cooled completely. Makes about 3 dozen cookies.

(Substitute dried cherries, blueberries, curants, M&M's or white chocolate chips if desired.)

Ingredients
v 3/4 stick vegetable shortening
v 3/4 cup sugar
v 3/4 cup brown sugar
v 2 large eggs
v 2 tsp. vanilla
v 1 cup all-purpose flour
v 1 tsp. baking soda
v 1 tsp. ground cinnamon
v 1/4 tsp. salt
v 2 3/4 cups rolled oats
v 1 cup dried cranberries
v 1 cup dark chocolate chips
v 1 cup chopped walnuts (pecans pistachios or hazelnuts)
