Soft Granola Bars Take-Two submitted by Mom Johnson
Not sure where this recipe came from but I have adapted it to take with us on our summer hikes. These bars are healthy and really good!

Heat oven to 350 degrees. Spray a 9x13 inch baking pan with cooking spray. Mix all dry ingredients in a large bowl. Whisk together the eggs, oil and vanilla; add to dry ingredients. Spread into pan and bake until set...about 17-22 minutes. cool for 30 minutes and cut into bars. Store tightly covered for up to 2 weeks. Freeze in a moisture-proof container for up to 6 months.
