Description
Sounds good, haven't tried it myself yet.

Directions
For cake:
Mix the dry ingredients together; add the oil and blend. Add the eggs one at a time and beat after each addition. Finally add the carrots and blend well. Pour equal amounts into 3 layer pans (8") and bake at 350 F. for 30 minutes - or 13x9" pan at 350 F. for 1 hour.

Topping:
Blend the cream cheese, powdered sugar, margarine and vanilla; then add the coconut and chopped pecans and mix thoroughly. Spread evenly over the top and sides of the layers. If cake is baked in the 13x9" pan, one half of the topping recipe is sufficient.

Ingredients
v 2 cups flour
v 1 tsp cinnamon
v 4 eggs
v 1 tsp baking soda
v 2 cups sugar
v 3 cups grated carrots
v 1 tsp baking powder
v 1-1/2 cups vegetable oil

v Topping:
v 8 oz. philadelphia cream cheese
v 1 stick margarine
v 1 can coconut
v 1 box powdered sugar
v 2 tsp vanilla
v 1/2 cup chopped pecans
