Main |  Lazy Cat Cake

Lazy Cat Cake submitted by Mom Johnson
Description
I have no idea where this name came from - but the cake is delicious!

Directions
Preheat oven to 350 degrees. Spray a 9x13 inch cake pan with cooking spray.
In a large bowl, whisk together the cake mix, water or coffee, oil, and eggs until well combined and pour batter into prepared pan.
Bake cake according to box instructions and cool completely.
Beat the cream cheese on medium speed until smooth and creamy, 1-2 minutes. Add sugar and vanilla and beat until well-combined.
Gradually add 1 cup of the cream and beat until the mixture is smooth and the sugar is dissolved. With the mixer running, gradually pour in another 1 cup of the cream, then increase the speed and beat until the mixture is stiffened and thickened. Do not overmix, 1-2 minutes.
Spread the cream cheese mixture evenly over the cake and chill in the frig, uncovered until set, about 1 hour.
When the cake is almost done chilling, make the ganache. In a microwaveable safe bowl, microwave 1 1/3 cups chocolate chips and the remaining 1 cup cream until melted, stirring thoroughly, about 1- 1 1/2 minutes.
Let the ganache rest at room temperature until it's cool to the touch. Spread evenly over the cream cheese mixture.
Melt the remaining 1/3 cup chocolate chips in the microwave and add the cereal. Toss evenly until coated. Top the ganache layer evenly with the cereal mixture, pressing gently to adhere.
Chill and serve! Refrigerate left-overs, tightly covered for up to 3 days. Serves 16-20
