Description
A great Christmas cookie that freezes well.
|
Directions
Beat shortening and butter; add sugars and beat until fluffy. Dissolve coffee crystals in water and add along with melted chocolate and egg to the butter mixture. Add the flour, cinnamon and salt. Shape into rolls and chill for at least 6 hours.
Slice 1/4 inch thick and bake on ungreased cookie sheets for 10-12 minutes at 350 degrees. Melt chocolate chips with shortening and dip 1/2 of the cookie.

2 oz. unsweetened chocolate, melted and cooled slightly
2 cups flour
1 tsp. cinnamon
1/4 tsp. salt
1/2 cup shortening
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 T. instant coffee crystals
1 tsp. water
1 egg
1 1/2 cups chocolate chips
3 T. shortening
