					Description 
					Consistency of black beans and can use same recipe for lentils.

				Directions 
				
				
            			Bring beans and triple amount of water to boil with meat and olive oil and bay leaves.  Boil until soft (1.5+ hours). Cuajado.  In middle of getting soft add potato (1) an calabasa squash, finish boiling. When tender add sofrito to beans. A little splash of vinegar and bring to boil. Simmer 10 more minutes. Saute onion, garlic, green pepper, oregano in olive oil. Add tomato sauce and a little wine. Add paprika and saffron.
