Description
Using 3-4 bananas, this bread stays moist and yummy for days! Optionally adding chocolate chips or a crumb toping, puts it "over the top" delicious!

Directions
Preheat oven to 350 degrees. Spray a 9x5 inch loaf pan with cooking spray. Beat butter in a large mixing bowl until light and fluffy. Add both sugars and beat well. Add the egg and the egg whites and vanilla beating until well-blended. Add the mashed bananas and beat on high speed for 30 seconds. Combine the flour, soda, salt and baking powder then add to the butter mixture. Add walnuts or chocolate chips if desired. Pour evenly into prepared pan and bake until browned and toothpick inserted into the center comes out clean, about 1 hour, 15 minutes. Cool bread in pan on a wire rack for 10 minutes; remove from pan and cool completely.

5 T. butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
2 egg whites
1 1/2 cups mashed very ripe bananas
1 3/4 cup flour
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1/2 cup heavy cream
1/2 cup chopped walnuts or chocolate chips, optional
