Description
I grew up loving these "pancakes". Today I use leftover mashed potatoes (Not very often because who has leftover mashed potatoes!?)

Directions
Cover potatoes with cold water; drain, grate at once, drain off water that collects.
Mix potatoes, onion, flour, bacon bits, eggs and seasonings, blending well.
Heat enough butter (about a quarter inch deep) in skillet. Just before butter turns brown, drop 1/3 cup batter for each pancake and flatten them out. When golden brown on one side, turn pancake over and cook till crisp and brown. Makes 6-12 servings.

Ingredients
v 6 medium potatoes (about 2 pounds), peeled
v 1 small onion grated or finely chopped (i use sliced green onions also)
v 2 T. flour
v 4 strips bacon, crisply cooked and crumbled
v 2 beaten eggs
v 1 1/2 tsp. salt
v Pinch of pepper
v Grated nutmeg, optional
v 2 T. chopped parsley
v Butter
