Description
I have used this basic muffin recipe for many years, adding different fruits, nuts or chocolate to taste. Enjoy!

Directions
In a large mixing bowl, stir together the flour, sugar, baking powder, and salt. Make a well in the center. combine the egg, milk and oil. Add the egg mixture to the dry ingredients and stir just until moistened; batter should be lumpy. Grease muffin tins or line with paper liners. If desired, make crunch topping; mix all ingredients until crumbly and scatter on top of muffins. Bake at 400 degrees for 20-25 minutes or till golden. Makes 12 muffins.

Ingredients
1 3/4 cup all purpose flour
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 beaten egg
3/4 cup milk
1/3 cup vegetable oil
Options:
1 cup fresh blueberries, 2 T. more sugar, 1 tsp. grated lemon peel
1 cup chopped apple, 1/2 tsp cinnamon, 1/4 cup raisins
1 cup fresh blackberries or raspberries, 1 tsp. grated lemon peel
1/2 cup mini chocolate chips, 1/2 cup chopped pecans
1 small can crushed pineapple, drained, 1/4 cup coconut and 1/4 cup macadamias, chopped
2/3 cup coarsely chopped dates and 1/2 cup walnuts or pecans, chopped
1 small can mandarin oranges, 1/4 cup coconut
1 can sour pie cherries, drained and 1/2 tsp. almond extract
Crunch topping:
1/2 cup flour
1/2 cup brown sugar
1/2 tsp. cinnamon
1/4 cup butter
