Moist and delicious zucchini and chocolate all in one!

1) Preheat oven to 350 degrees and grease a 9x5 inch loaf pan.
2) In a large bowl cream shortening and sugar. Mix in eggs. Add zucchini, water and vanilla. Stir. Blend in flour, baking soda, salt, baking powder and spices. Stir in nuts.
3) Pour half of the batter into the prepared pan. To the batter remaining in the bowl add cocoa powder and chocolate chips. Pour chocolate batter on top of plain batter.
4) Bake until wooden pick inserted into center comes out clean - about 1 hour. Cool 10 minutes and remove from pan. Store in refrigerator.

v 1/3 cup canola oil (or can use shortening)
v 1 1/3 cups sugar
v 2 eggs
v 1 1/2 cups shredded zucchini
v 1/3 cup water
v 1 teaspoon vanilla
v 1 2/3 Cups whole wheat pastry flour (can use all-purpose, or 1/2 whole wheat and 1/2 all-purpose)
v 1 teaspoon baking soda
v 1/2 teaspoon salt
v 1/4 teaspoon baking powder
v 1 teaspoon pumpkin pie spice -- or ground cinnamon, cloves and nutmeg
v 1/3 cup chopped nuts
v 3 tablespoons cocoa
v 1/3 cup miniature chocolate chips
