Great breakfast bread!

1. Preheat oven to 350F degrees and grease the bottom of a 9" X 5" loaf pan.

2. In a large bowl, mix the flour, oats, sugar, baking powder, lemon
peel, baking soda, & salt. In a small bowl, mix the milk, oil,
vanilla, and eggs.

3. Add the wet ingredients to the dry ingredients; stir just until dry
ingredients are moistened. Fold in the blueberries and pour into
greased pan.

4. Bake at 350F degrees for 50 to 60 minutes or until toothpick
inserted in center comes out clean. Cool ten minutes; remove from pan.

v 1c oats
v 3/4c sugar
v 2t baking powder
v 1t grated lemon peel
v 1/2t baking soda
v 1/2t salt
v 1-1/4c skim milk (or soy milk)
v 1/3c canola oil
v 2t vanilla
v 2 eggs
v 1c blueberries
