A Sweet Ending to Cinco De Mayo
So you started with some chips and guacamole, maybe you made some of your own flour tortillas, maybe you had enchiladas. Cinco De Mayo wouldn't be complete without a couple Corona's. But what did you end your night with? If you're like us, you ended your Cinco De Mayo fiesta with some fried ice cream...
Now I'm not completely sure what the history of fried ice cream is, in fact I can't find anything on google about it's history. So I'm not sure that fried ice cream is even truly 'Mexican' (because we all know that google is the authority on Mexican food history), but every Mexican restaurant I know serves it, so it must be at least Mexican-American.
Regardless of it's history, fried ice cream is the best of all worlds: hot (crispy fried coconut, cookie crumbs or walnuts) and cold (cool creamy vanilla ice cream) topped with your choice of goodness (caramel, chocolate, or whipped cream). You know how sometimes you have ice cream and it's too hard? Or how sometimes the ice cream is too soft? Fried ice cream is the best of both worlds: the outside of your ice cream sphere is already soft from being exposed to the hot oil, but the inside is still frozen solid.
So the next time Cinco De Mayo rolls around (presumably sometime in May, I think near the 5th), remember that flan doesn't cut the salsa... err... mustard. Fried ice cream es muy bueno!
