Description
This must be the all-time most asked for salad recipe I have! And it's non-fat dressing is wonderful. Change the fruit to your tastes.

Directions
In a small saucepan, combine water and cornstarch with a wire whisk until well mixed. Bring to a boil, boiling for 1 minute, stirring constantly. Remove from heat and add the jam, vinegar and sugar. Beat until smooth. Refrigerate until serving time.

Just before serving, arrange salad greens and sprinkle the onions over the top. Place strawberries and orange segments evenly over the top and drizzle the dressing over all. Sprinkle with nuts.

Ingredients
v Dressing

v 1 1/4 cups water
v 1 T. cornstarch
v 1 cup seedless raspberry jam (Try other flavors also!)
v 1/3 cup red wine vinegar (or raspberry balsamic!)
v 1 T. sugar

v Salad

v 10 cups torn mixed greens such as romaine, spinach, etc.
v 4 cups sliced fresh strawberries
v 3 cans (11 oz.) mandarin orange segments, well drained
v 1/2 cup sliced and toasted nuts (almonds, pecans, etc.)
v (Optional) 1 cup finely sliced red onion
