Description
This creamy sweet potato recipe is a hit with everyone! If we eat the skins, does that make it healthy???

Directions
Preheat oven to 350 degrees. Rub sweet potatoes with salad oil and wrap in aluminum foil; bake for 1 hour or until soft.

In a large bowl, combine cream cheese, brown sugar, butter, vanilla, salt and pepper and cranberries, if desired.

Cut potatoes in half lengthwise and scoop the flesh into the bowl with the other ingredients. Mix well; fold in walnuts. Spoon mixture back into the potato skins.

Bake for 10-15 minutes or until heated through. Serves 6.

v 6 sweet potatoes
v 1 T. salad oil
v 1 ( 8 oz) package cream cheese, softened
v 1/3 cup brown sugar
v 2 T. butter
v 1 T. vanilla extract
v 3/4 tsp. salt
v 1/2 tsp. pepper
v 1/3 cup chopped and toasted walnuts
v 2 T. dried sweetened cranberries, optional
