MainRecipesThanksgiving | Potato lefse

Potato lefse submitted by Karen Johnson
Description
This recipe is from June Bergsagel (Uncle Erick's sister). Traditional Norwegian dish best served with butter and sugar, rolled and cut in half. Used as bread at a meal.

Directions
Mix first four ingredients and then add 2 cups of flour.
Knead mixture until smooth. Make sure it is all cold (keep cold in refrigerator) before rolling out. Roll out thin (use as little flour as possible while rolling out or it will get tough) and bake on lefse grill or electric frying pan, turning over once.

Lay towel or wax paper between finished pancakes. Smear with butter and sprinkle with granulated sugar, roll up and cut.
