MainRecipesHoliday | Baked Apple Cider Doughnuts

Baked Apple Cider Doughnuts submitted by Mom Johnson
Not sure where this recipe came from - and it's not only healthy, it's also very good!

Preheat oven to 325 degrees. Spray doughnut pan and set aside. In a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon and nutmeg. In another large bowl, combine the egg,, brown sugar, apple puree, cider, yogurt, and oil. Mix until well blended.

Add flour mixture in small amounts and mix until just incorporated. Spoon into prepared pan. Bake 15-20 minutes or until lightly browned.

While doughnuts are baking, prepare a shallow bowl with sugar and cinnamon. Immediately after baking, place doughnuts in the bowl and coat evenly on both sides. Serve a heaping spoonful of the apple cider sauce on top. Makes 12 doughnuts.

Puree one apple and add to small saucepan with 1 diced apple. Add the apple cider and heat over medium heat till boiling. Stir in cinnamon, nutmeg and sugar. Stir till boiling resumes. Allow to boil for about 5 minutes and remove from heat. Add 1 T. lemon juice.
