Description
Fabulous as a topping for a baked potato bar!

Directions
Scrub, prick and bake potatoes until done. Cook peppers and onion in butter until tender. Add taco seasoning mix and cook for 1 more minute. Remove from heat and stir in chicken, cheeses, olives and chilies. Cut each potato lengthwise and press open. Divide chicken mixture evenly among the potatoes. Spoon 1/4 cup salsa over each. Cook on high in microwave for about 5 minutes or until heated through. Serve with condiments as desired.




Ingredients
v 4 large baking potatoes
v 1 medium red or green bell pepper, chopped
v 1/4 cup onion
v 2 T. butter
v 1 T. taco seasoning mix
v 2 cups cooked chicken, shredded into bite-sized pieces
v 1/2 cup shredded cheddar cheese
v 1/2 cup shredded Monterey Jack cheese
v 2 1/2 oz. can diced green chili peppers
v 1 cup salsa
v Sour cream, guacamole, salsa , cheese for toppings
