Lemon Coconut Filling submitted by Mom Johnson
A wonderful sweet and tangy filling recipe for a white or yellow cake.

Mix sugar, coconut and cornstarch in a saucepan.
Add water,, lemon juice and grated lemon peel. Bring to a boil; reduce heat and simmer for about 1 minute, stirring constantly. Add 1 tablespoon of butter, stir and let cool. Makes about 2 cups filling.

v 1 1/2 cup sugar
v 1 cup coconut
v 1/4 cup cornstarch

v 1 cup boiling water
v 1/2 cup fresh lemon juice
v 2 T. grated lemon peel
v 1 T. butter
