Perfect for a Fall morning brunch or snack.
Preheat oven to 350 degrees.
In a bowl, add the butter, brown sugar, sugar, cinnamon and flour. Use a pastry blender to make coarse crumbs and chill until ready to use.
In another bowl, add the flour, cinnamon, nutmeg, salt, and baking soda, stirring to combine.
In a large bowl, add the butter, sugar and maple syrup. Whisk until fully incorporated.
Add the egg and vanilla to the bowl with the butter and mix.
Add half the flour mixture and mix just until combined. Add the second half of the flour mixture and mix until there are no streaks of flour still showing, making sure not to overmix.
Pour lemon juice over the apples, then gently fold apples into the batter.
Spread the batter evenly into a greased 9 inch square pan.
Sprinkle the crumble mixture over the top.
Bake for 25 minutes or until a toothpick comes out clean, covering with foil to prevent over browning. Let cool for 20 minutes, slice and enjoy!
