Cranberry Orange Pound Cake submitted by Mom Johnson
This recipe makes 2 loaf pans, perfect for freezing ahead of your busy holidays!

Preheat oven to 350 degrees.

In a large bowl, cream the butter, sugar and orange zest together for 3-5 minutes.

Add eggs one at a time and beat an additional minute for each egg.

Mix and combine dry ingredients in a separate large bowl.

Add dry ingredients alternating with the buttermilk to the butter/sugar/zest/egg mixture.

Fold in cranberries.

Grease and flour 2 loaf pans. Pour in batter; bake at 350 degrees for 55-60 minutes.

Let loaves cool, then pour glaze over the top.

Glaze - whisk all glaze ingredients together until smooth.

v 1 cup butter
v 1 3/4 cups sugar
v 2 T. orange zest
v 3 eggs
v 1/2 tsp. vanilla
v 3/4 cup buttermilk
v 2 1/2 cups fresh cranberries
v 2 1/2 cups flour
v 2 tsp. baking powder
v 1 tsp. salt

v Orange Glaze:
v 1 1/2 cups powdered sugar
v 1 T. fresh orange juice
v 1 T. orange zest
v 1 T. milk
v 1/2 tsp. vanilla
