Bison Meat Loaf submitted by Mom Johnson
Bison has higher protein, iron and B-12 than ground is much lower in fat and cholesterol. We really enjoyed this Italian version of meatloaf - serve with your favorite Italian-style sauce.

Preheat oven to 350 degrees. Mix all ingredients together in a large bowl, using your hands. Spray a shallow, oval casserole dish with Pam. Pat the meat mixture into the pan and top with tomato sauce or ketchup if desired. Bake for 1 1/4 - 1 1/2 hours. (I baked mine on "convection bake" for about 1 hour) Top with more tomato sauce or ketchup, if desired.

v 2 pounds ground bison meat
v 3 garlic cloves, minced
v 2 beaten eggs
v 1 cup chopped sweet onion
v 1/2 tsp. ground pepper
v 1/2 cup seasoned or plain bread crumbs
v 1/2 cup shredded parmesan cheese
v 1/2 tsp. salt
v 2 tsp. Worcestershire sauce
v 1/4 tsp. ground thyme
v 1 tsp. oregano
v 1 tsp. basil
v 1 tsp. sage
