Sprinkle this crunchy granola over your own homemade eggnog yogurt!

Preheat the oven to 300 degrees. Toss the oats, pistachios, wheat germ, sesame seeds, maple syrup, brown sugar, vanilla, oil, cinnamon, cardamon and 1 tsp. salt in a bowl. Spread on a rimmed baking sheet and bake for 20 minutes, stirring halfway through. remove from oven and stir in coconut. Return the granola to the oven and bake until golden, about 20-25 minutes more, stirring halfway though again. Remove from oven and stir in the cranberries, apricots, sunflower seeds and cherries. Store in an airtight container or in the freezer for up to 2 weeks.

v 3 cups whole rolled oats
v 1 cup pistachios
v 1/3 cup wheat germ
v 2 T. sesame seeds
v 1/2 cup pure maple syrup
v 1/2 cup extra virgin olive oil (or canola oil)
v 1/4 cup packed light brown sugar
v 1 tsp. vanilla
v 1/2 tsp. ground cinnamon
v 1/4 tsp. ground cardamon
v Kosher salt
v 1/2 cup unsweetened coconut flakes (Bob's Red Mill)
v 1/2 cup dried cranberries
v 1/2 cup chopped dried apricots
v 1/2 cup sunflower kernels (optional)
v 1/2 cup dried sour cherries (optional)
