Pumpkin Streusel Muffins submitted by Karen Johnson
Recipe passed along from Merrily Erickson.

Heat oven to 400F

Ready muffin tins.
In medium bowl, combine egg, milk, pumpkin, and oil and mix well.

Lightly spoon flour into measuring cup level off. Add dry ingredients to flour and add to wet ingredients. Fill muffin cups half full.

Divide cream cheese into 12 equal pieces, place one piece on batter in each cup. Top with reserved batter to 3/4 full.

Combine streusel topping ingredients and mix well. Sprinkle on each muffin.
Bake for 18-22 minutes until golden.

v 1 egg beaten
v 1/2 c milk
v 1/2 c canned pumpkin
v 1/3 c oil
v 1.75 cup flour
v 1/2 c sugar
v 3 tsp baking powder
v 1/2-1 tsp cinnamon
v 1/2 tsp salt
v 1/2 tsp nutmeg
v 3 oz pkg cream cheese

v Streusel Topping
v 1/4 cup firmly packed brown sugar
v 1/2 tsp cinnamon
v 1 Tbsp butter
v 1/4 cup finely chopped nuts
