Apricot-Glazed Ham Loaf submitted by Mom Johnson
From Better Homes and Gardens 2011 Holiday recipes.... (I used a turkey ham, cut it up into 1-inch cubes and then processed it in a food processor.)

Preheat oven to 350 degrees. In a large bowl combine eggs, bread crumbs, onion, pineapple juice, mustard, pepper and salt. Add ground ham, pork and apricots; mix well. In a 3-quart rectangular baking dish, lightly pat mixture into a 9x5 inch loaf.

Bake for 45-60 minutes or until an instant-read thermometer inserted in center of loaf registers 165 degrees, brushing several times with half of the apricot glaze during the last 10 minutes. Use spatulas to transfer loaf to a platter. Cut into thick slices and serve with remaining half of the apricot glaze. Makes 8 servings.
