Description
I made this recipe and dried the jerky in my new food dehydrator...turned out great! Add more or less sugar and red pepper to your own taste. Be sure to take off as much visible fat as possible.

Directions
Trim the flank steak of any excess ft, place in a Zip-lock bag and place it in the freezer to firm up but not freeze. Remove the steak from the freezer and slice against the grain into long strips. Place the strips of meat into a 1-gallon Zip-lock bag along with remaining ingredients, evenly distributing the ingredients. Place bag into refrigerator for 3-24 hours.

Remove the meat from the brine and pat dry. Evenly distribute the strips of meat onto the dehydrator trays. Follow the manufacturer's instructions for drying. Once dry, store in a cool, dry place in an airtight container for 2-3 months. (I always put mine in the refrigerator.)

v 1 1/2-2 pounds lean flank steak
v 2/3 cup Worcestershire sauce
v 2/3 cup soy sauce
v 1 T. honey
v 2 T. brown sugar
v 2 tsp. freshly ground black pepper
v 2 tsp. onion powder
v 1 tsp. Liquid Smoke
v 1 tsp. dried red pepper flakes
