This delightful tomato-season recipe came from my friend, Kandy.....I could have eaten the entire salad myself, except I HAD to share!
Whisk together the first 5 ingredients for the dressing. Stir in the fresh peach chunks and the basil. Spoon over the sliced tomatoes and top with the cheese and toasted pecans. Sprinkle with the freshly ground pepper to taste. Makes 4-6 servings.
1/3 cup white balsamic vinegar (Trader Joe's)
1 garlic clove, minced
2 T. brown sugar
2 T. olive oil
1/8 tsp. salt
1 large peeled, diced fresh peach
2 T. chopped fresh basil
2 pounds sliced heirloom tomatoes
3 oz. fresh goat cheese (Or fresh mozzarella)
1/2 cup coarsely chopped toasted pecans
