Mix first 7 ingredients well and drizzle over mixed, cut-up melon pieces. Chill well.
1 cup rice wine vinegar
1/3 cup granulated sugar
1/3 cup water
1/2 tsp. crushed red pepper flakes
1/3 cup chopped red onion
1 English cucumber, peeled and chopped
1/4 cup chopped cilantro
Cantalope, watermelon, Honeydew melon cut up into chunks
