Salmon with Mango Salsa submitted by Karen Johnson
This fruit salsa is unique as it has balsamic vinegar and ginger. This would be great with pork and chicken also.

Combine mango, tomato, onion, cilantro, ginger, balsamic and sugar. Place salmon skin side down and sprinkle with lemon juice, salt and pepper. Grill for approx. 10 minutes per inch.

v 4 salmon fillets, 8-10oz ea
v 2 mangos diced
v 1 large tomato diced
v 4 green onions chopped
v 1/4 cup cilantro chopped
v 1 Tbsp fresh ginger finely diced
v 1 Tbsp balsamic vinegar
v 1 Tbsp sugar
v Juice of 1 lemon
v salt
v pepper
