From my friend Gloria who makes wonderful breakfasts! We made this dish on the morning after Kevin's and Belen's wedding. A wonderful Fall dish, combining the flavors of sweet/tart apples and sausage. Easy and fast!
Heat oven to 375 degrees. Spray a 9x13 inch baking dish with cooking spray. In a medium skillet, cook sausage for 5-7 minutes until thoroughly cooked; drain. Stir in pie filling and apples. Spread mixture evenly into baking dish and top with 1 cup of the shredded cheese.
In a large bowl, stir Bisquick, milk, salt and pepper, and eggs with a wire whisk or fork until well blended. Pour evenly over cheese and meat mixture.
Bake for 30-35 minutes or until knife inserted in center comes out clean. Top with remaining 1 cup cheese and bake for 3-5 minutes longer or until cheese is melted. let stand for 5 minutes before serving. Serves 12.
