Black Bean Feta and Corn Salsa submitted by Karen Johnson
This yummy dip/salsa is best served with tortilla chips - yum!

Mix beans through green onions in a bowl. Combine dressing ingredients separately. Pour over bean mixture and toss lightly.

v 2 cans black beans, drained and rinsed
v Feta cheese, to your liking, maybe 2 oz
v Corn, may be thawed or fresh
v 1/4 cup green onions or more to your liking

v Dressing:
v garlic
v pepper
v 1/4 c oil
v 1/4 c sugar
v 1/4 c apple cider vinegar
v You can use less of the oil, sugar, vinegar, depending on your tastes.
