Fruit and Cheese Pitas submitted by Mom Johnson
A quick and light lunch for vegetarians.

In a small bowl, stir together the cottage cheese, cheddar or Swiss cheese, kiwifruit or strawberries, pineapple tidbits and chives or onion. to serve, place lettuce leaves in pita halves and spoon the fruit and cheese mixture into the pitas. 2 servings.

v 1/2 cup cottage cheese
v 1/2 cup diced sharp cheddar or Swiss cheese
v 1 kiwifruit, peeled and diced (or use 1/2 cup sliced strawberries)
v 1/4 cup drained pineapple tidbits
v 1 T. snipped fresh chives or finely chopped green onion
v Lettuce leaves
v 1 large pita pocket round, cut in half
