Squash Quick Bread submitted by Karen Johnson
This is a delicious take on zucchini bread. Adapted from EatingWell.

1. Preheat oven to 350. Grease a 9x5 loaf pan.
2. Whisk flour through cloves in a bowl.
3. Beat squash, sugar, honey and oil in an electric mixer until smooth - give or take a minute. Add egg and egg white beat well. Add dry ingredients all at once with mixer off. Beat on low speed until combined. Pour into pan.
4. Bake until lightly browned and toothpick in center is clean. 45-50 min. Cool for 10 min. and then turn out. Enjoy!

v 2/3 c flour
v 1/2 c whole wheat pastry flour
v 1/2 t baking powder
v 1/4 t baking soda
v 1/2 t cinnamon
v 1/2 t ground ginger
v 1/4 t salt
v 1/8 t ground cloves
v 3/4 c squash puree (you may use canned or cooked fresh - I cooked a butternut squash and just scooped the insides into the bowl. No need to even puree).
v 1/2 c sugar
v 1/4 c honey
v 1/4 c canola oil
v 1 large egg
v 1 large eggwhite
