Ground Turkey Meatball Soup submitted by Mom Johnson
A favorite quick soup to serve after the holidays. Serve with Cranberry Upside-down Muffins.

Mix ground turkey with thyme, cornstarch, green onion and pepper. Bring chicken broth to boiling. Pat turkey mixture into 1-inch balls and drop into boiling broth. Add sliced carrots, zucchini, celery and noodles. Bring to a boil and simmer til tender, about 10 minutes. 4-6 servings.

v 1 pound ground turkey
v 1 tsp. thyme
v 2 T. cornstarch
v 2 T. sliced green onions
v 1/4 tsp. pepper
v 3 cans chicken broth
v 4 large carrots, 1/4 inch slices
v 2 medium zucchini, sliced
v 3 stalks celery, sliced
v 1 cup uncooked medium noodles
