Almond Chicken Pasta Salad submitted by Mom Johnson
The ginger, honey, and lime dressing gives this pasta salad a winning edge. One of our favorite summer salads! Try adding different seasonal fresh fruits like raspberries or fresh pineapple and oranges, or blueberries.

In a large bowl toss together the cooked chicken, apples, cooked pasta, pineapple, grapes, celery, and onion. For dressing, in a small bowl combine the mayonnaise or salad dressing, yogurt, sesame seed, lime peel, lime juice, honey, gingerroot, and salt. Pour over pasta mixture; toss gently to combine. Cover and chill. To serve, if necessary, add several tablespoons of milk to moisten. Toss gently. Serve on lettuce-lined plates. Top with nuts and if desired, garnish with lime slices, avocado, and red sweet pepper. Makes 10 main-dish servings.

v 4 cups cooked, cubed chicken
v 2 medium apples, cored and coarsely chopped (2 cups)
v 8 oz. corkscrew or bow tie pasta, cooked and drained
v 1 (8 1/2 oz.) can pineapple chunks, drained (May use fresh!)
v 1/2 cup halved seedless grapes
v 1/3 cup bias-sliced celery
v 1/4 cup thinly sliced green onion
v 3/4 cup mayonnaise or salad dressing
v 1/3 cup low-fat plain or vanilla yogurt
v 1 T. sesame seed
v 1 tsp. finely shredded lime peel
v 3 T. lime juice
v 1 T. honey
v 2 tsp. grated fresh ginger
v 1/4 tsp. salt
v Lettuce leaves, optional
v 1/2 cup toasted sliced or candied nuts
v Lime slices, optional
v Avocado slices, optional
v Diced red sweet pepper, optional
