Description
A tasty bean salad using more fresh lime juice than oil for the dressing - making this healthier than usual! You will need 3-4 ears of fresh corn to yield 2 cups, or use frozen, thawed corn. I like to BBQ a few chicken thighs to go with this salad!

Directions
Whisk lime juice, oil, green onions, chipotle, honey, salt and pepper in a bowl. Add beans, corn, avocados, tomatoes, and cilantro to a large bowl and toss with the dressing. Season with salt and pepper to taste. Serves 6-8.

Ingredients
1/3 cup lime juice (about 3 limes)
1/4 cup extra virgin olive oil
4 green onions, sliced thinly
1 T. minced canned chipotle chile in adobo sauce (More as desired)
1 T. honey
1/2 tsp, salt
1/2 tsp. pepper
2 cups fresh or frozen corn
2 (15 oz.) cans black beans, drained and rinsed
2 avocados, halved, pitted, cut into 1/2 inch pieces
2 tomatoes, cored and chopped
1/4 cup minced fresh cilantro
